Grilled Cheese Sandwich

My grandmother made them for my mom; mom made them for me; I made them for my kids and my kids make them for my grandkids. So simple even Professor GrowTutor can do it...

Ingredients:
2 slices of bread (your choice)
butter
1 slice of cheese (also your choice)
(makes 1 sandwich but I've never made just one)

Prep:
Butter one side of the bread.

Heat skillet.

Cooking:
Over medium heat lay one slice of bread in the hot pan butter side down.
Top with 1 slice of cheese.
Lay second slice of bread over cheese butter side up.

Cook until golden brown on the bottom and flip, flattening with the spatula.

Cook other side until golden brown.
Cool on folded paper towel to absorb excess butter.

Optional:
Cut diagonally.

Serving suggestions:
Serve with tomato soup.

When I was a kid I wasn't big on tomato soup...except with grilled cheese. ;)

It's certainly one of the best comfort foods. Also big on my list would be biscuits and country gravy and fried 'taters and onions. I wish I had learned to make my mom's gravy... :(

Isn't amazing how some foods can mentally transport you back in time?

I do find it simply amazing that a scent or taste does bring back all those wonderful memories from being very young. I also love that those things can be expanded on. My mom has always been a hippie taking in all of my friends when I was young. So we were always cooking for a crowd and smoking as a crowd lol. I will always remember homemade biscuit and gravy made with the leftover pan scrapings in that big old cast iron skillet. my favorite was always hand breaded chicken fried steaks with garlic cheese mashed potatoes and fried okra!

OMG I *love* fried okra...I wish I had learned her recipe for that too.

My mother was an Okie as you might be able to tell by my love for grilled cheese, biscuits and gravy and fried okra (her chicken fried steak was pretty damn good too) but another thing she'd cook for our fishing trips was fried egg sandwiches. So I decided to slip a fried egg in my grilled cheese recipe and it was damn good too. Give it a shot... :thumbup:

Mmmm egg and cheese sandwich!! Throw some ketchup next to it and I will feel like I am 5 again and grandma is cooking breakfast. I like a nice crispy pile of hash browns with some cheddar melted over them, then a mix of breakfast sausage onion and green peppers over them, then two sunny side up right on top.
